Pooley Butcher's Hill Chardonnay draws solely from Butcher's Hill Vineyard, the steepest site in the Coal River Valley near Hobart. The fruit is hand harvested.
Fruit from this site was once destined for the Australian icon Penfolds Yattarna Chardonnay. To retain the character of the site, minimal intervention winemaking practices are used.
The grapes are whole bunch pressed to tank, cold settled and racked to barrel. Post ferment, the wine matures for nine months without stirring and sees partial malolactic fermentation.
Pale straw, Pooley Butcher's Hill Chardonnay is a textural wine with ripe stone fruit flavours kept fresh by a long citrus acidity. Cellaring potential is five years.
